I am always looking for creative and tasty ways to get more vegetables in my diet. This delicious, super easy garlic parmesan carrot recipe is the perfect healthy snack to get you through the day!
The first thing I did to make these carrot bites was peel and wash four carrots. I then cut them into thin slices, about 1/4 to 1/2 inch thick. I stuck the carrot slices onto a paper towel to soak up any extra moisture.
Next, I poured about two tablespoons of extra virgin olive oil into a large ziplock bag. I poured in the carrots and shook them around until they were all completely coated. Then, I added some flavor! I added about half a teaspoon of garlic powder, half a teaspoon of black pepper, and a little more than a teaspoon of parmesan cheese (Next time I make this, I am definitely going to go heavier on the cheese). You can really season these with whatever you want to. I think cayenne pepper would be amazing on these! Once the seasoning was added, I shook the carrots up again to completely coat them.
Next up, I placed the carrots in a single layer on a baking sheet and baked them for about fifteen minutes at 450 degrees. At the fifteen minute mark, I took them out and shook them around a little, making sure they were back in a single layer before putting them in for an additional fifteen minutes. Once they were crispy, I took them out and served them in a bowl. My family absolutely loved this snack! These carrots could just as easily be a side dish for your favorite meal rather than a healthy snack, but either way I hope you love them as much as I do!
